If I plan on serving them as a side dish I drain the chickpeas and pack them with hot chicken broth, a sprig of rosemary, one bay leaf and one small whole clove of garlic. The temperatures obtained in open kettle canning are not high enough to destroy all spoilage and food poisoning organisms that may be in the food. Normally that would be a good thing but only three of us like raw cucumbers and only four of us like pickles. {sigh} So, I’m doing my best to preserve the cucumbers for the winter and to share with friends and family.
